Haiku is classified as a tokubetsu junmai — “tokubetsu” meaning “special” and referring to the extra care that goes into preparing the rice. The rice used to brew Haiku is polished up to 60% — a further 10% than our Traditional junmai. A more slow and carefully controlled fermentation gives Haiku a elegant fragrance and refined palate.
Lightly herbaceous with hints of pear and apple. Good acidity and a medium-dry finish.
